f3ed8cb1-3c8a-4d77-b4e3-40a0fe639c0cMy name is Valerie and I am a French Canadian living in the beautiful province of British-Columbia, Canada . I am a Certified Holistic Nutrition Consultant, Personal Chef and a Mindfulness-Based Stress Reduction Coach.

I would say that holistic nutrition found me before I found it! My passions for nutrition and wellness came when I got very sick with Uterine Fibroids. After three visits to the emergency room with severe bouts of bleeding and pain, the doctors decided to remove the fibroid. I then had to give my body the time it needed to heal and was forced into five weeks of convalescence. The events were, for me, a “wake-up” call pushing me to rethink all my life choices! At that time I was in a bad relationship, did not love my job and my diet was, well, very SAD (Standard American Diet)!

I decided to take my health in my hands and start searching for my true calling. I came upon a company by the name of Crudessence. It is a living food company based out of Montreal, Canada. They taught me how to include living enzymes and probiotic-rich foods into my everyday diet. They helped me change the way I eat and made me realize the impact foods have on health and the environment. I now base my food choices on a deeper respect for all life and for global wellbeing. Within a couple months, I regained energy and felt alive again! The logical next step for me was to let go of my bad relationship and to move away, which is how I ended in San Francisco!

After my mother passed away from liver cancer the following year, I decided to honor her memory by putting the money I inherited from her passing towards my education. It’s then that I found Bauman College and their Holistic Nutrition Consultant program.

My life has changed more than I could have ever imagined in the last few years, and it all started with food! I now strive to educate clients all over the world on the impact food can have on the body, mind, soul and environment. I am a non-dogmatic eater, not using a label to categorize the way I choose to eat. I am not Vegan, Vegetarian, Paleo or Mediterranean. I simply choose to eat locally and organically as much as possible, grow my own vegetables in season, visit the Farmers Market every week and get the highest quality ingredients to make tasty dishes at home! I am grateful everyday for the simple, delicious, real, organic and sustainable foods I have chosen to make part of my life forever!
